So, with so many of us at uni now, and a need for cheap meals on a student budget I thought we could share recipies... Please contribute... I will be sharing a mixture of things I know and things I have cooked from books.
I will start with some basic tips for everyone:
Portion of meat - 110g Portion of fish - 150g Portion of rice - 60g Portion of pasta - 70g
Simple Risotto - This is one I used to cook at home. It works best with left over roast chicken but can be done with finely diced breast.
This is a nice simple recipie which can be made for one or 2 days and reheated on the second day.
(SERVES 2)
120g of Rice - Traditionally, short grain itallian rice, but, lets face it, who really cares... 1 Stock cube - Vegetable or chicken is best Oil 1 Small onion 1 Sweet pepper (capsicum) 1/2 Carrott Celery 220g of Chicken breast, very finely diced Tin of tomatoes 1 Tbls Tomato puree Seasoning
Rinse the rice to remove excess startch. Make up the stock cube as per the instructions. Fry the onion and peppers. Add the chicken after about 4 minutes. Gently fry for another 5 minutes or so. Add the uncooked rice and then the stock. Add the tin of tomato and the puree and bring to the boil. Add the carrott and celery, which should be diced finley. Simmer gently to reduce for around 15-20 minutes. Season with salt and pepper. Check the rice is cooked and serve. you could also grate cheese over the top. Serve and enjoy!

Aubergine BakeYou will need; - Aubergine
- Tomatoes
- Oil
- Tinfoil
- Black pepper
- Piri-piri/chili powder
- Italian/pizza seasoning
- Cheese
- Baking Tray
1.) Slice aubergines quite thinly, spray or drizzle over some oil and bake them in a hot oven on a tinfoil covered baking tray till crisp. 2.) Chop up some tomatoes into little pieces mix in some italian/pizza seasoning, some black pepper and some piri-piri or chili and put ontop of the crisy aubergine. 3.)cover with a tomato-based pasta sauce, top with cheese sprinkle with seasoning and return to the oven until the cheese is golden hot and bubbling. Eat with Rice or crispy bread. Basic White Sauce - Butter
- Flour
- Milk
- Salt
- Pepper
1.) Heat the butter gently in a pan until it melts 2.) Stir in the flour, use enough to make a paste 3.) Over a gentle heat, stir in the milk 4.) Keep stiring until the sauce thickens 5.) At this point you can add Cheese, Gently sauteed mushrooms or golden onions and any seasoning to taste. Pasta Bake - Dried Pasta
- Big Saucepan with a lid
- Flavouring (cheese, bacon, onions, mushrooms, sausages, tuna, beefburger, etc)
- Crisps or Savoury Biscuits to top
- Cheese to top
- Suitable tray/dish to bake in
- Seasoning
- Oil
- Salt
1.) Boil the pasta with the a little salt and oil in the large saucepan until soft 2.) Prepare sauce as per simple white sauce 3.) Add flavourings and seasonings to taste 4.) Stir into pasta 5.) Place pasta in baking tray/dish 6.) Slice or grate cheese on top 7.) Crumble crisps or savoury biscuits on top of cheese to give a crispy covering 8.) Sprinkle a little seasoning on top and bake at the centre of a hot over until golden Carrot and Corriander Soup[/b] - Carrots
- Cellery
- Corriander powder
- Vedgetable Stock
- Black Pepper to season
- Saucepan
- Blender
1.) Chop up the carrots and cellery 2.) Bring to the boil the carrots and cellery in a small amount of plain water and then leave to simer 3.) Make up the stock with a little of the corriander powder and boiling water 4.) When the vedgetables are nearly soft add the stock mixture and turn up the stove to let some of the water boil off, stirring regularly 5.) Blend the soup smooth 6.) Season with more corriander and black pepper to taste. Serve with a thick chunk of crispy bread

Spicy Italian Tomato Soup- Fresh Tomatoes
- Tinned tomatoes
- Onions
- Spring Onions
- Red Pepper
- Oil or butter
- Saucepan
- Garlic Powder
- Oregano
- Basil
- Chili or piri-piri
- Salt + pepper to season
1.) Chop the peppers and onions finely. Chop the fresh tomatoes into small pieces. 2.) Heat the butter or oil in the saucepan with some water adding the chopped peppers and onions and cook until soft 3.) Add the chopped tomatoes and reduce the mixture over a low heat, stirring regularly to avoid burning 4.) Chop the tinned tomatoes and add to the mixture, turning up the heat and stirring regularly 5.) Season with the garlic, oregano, basil, chili or piri-piri and salt and pepper to taste Stir and serve with a chunk of thick crusty bread Minus the water this recipie can be used to make a spicy tomato pasta sauce Cowboy Bean Bake- Tinned Mixed Bean Salad
- Tinned Kidney Beans
- Sausages
- Bacon
- Black Pepper
- Chili/Piri-Piri seasoning
- Onions
- Tinned tomatoes
- Butter
- Frying Pan
- Saucepan
You can also Include; - Beef/ Beefburger
- Tomato Puree
- Fresh Tomatoes
- Cheese to serve
1.) Chop the sausages and bacon (and beefburger) 2.) Heat the butter in the frying pan and fry the meat until its cooked through 3.) Remove the meat from the pan and set aside 4.) Brown the onions in the frying pan with the butter and left over bacon fat 5.) Heat all the beans in the saucepan 6.) Add the tinned tomatoes to the beans and heat through 7.) Add the meat 8.) Season to taste More to come later folks

Cool, I do the exact opposite, I decide what I want to make, then, get stuff to do it! Aubergene bake sounds well nice! I'm doing egg fried rice tonight, but, it's a must! Egg Fried RiceServes 1 - Chicken breast - 110g
- Rice - 60g
- Frozen peas - third of a mug
- Red pepper - 1/4
- Egg - 1
- Onion
- Mushrooms - whatever.
- Other veg? e.g. Aubergene, Bean sprouts etc.
1) Put the rice on to cook. 2) Finely dice the chicken. I find the best way to do this (having done it before) is to take a breast and cut it into thin slices, around 5mm thick. Then, cut all these in half. You should be lect with medallions of chicken breast, 3-4cm square. Throw these in a wok (or frying pan) with some oil and throughly cook on a high heat. Add your onion part way through. 3) Add mushroom to the mix and cook for around 2 minutes. 4) Add all the other veg. 5) When your rice is cooked, drain and add to the wok. Make sure the heat is still high. 6) When the other veg is cooked, turn the heat up and add the egg. As soon as you add the egg, stir like a madman. keep it moving, get everything coated with the egg. When all the egg is throughly cooked, serve! Enjoy!

Surely that's special fried rice as it contains more than eggs and peas As its f*cking freezing here in Bournemouth, some warming soups tonight: Easy Pea Soup- Tinned Mushy Peas
- Salt and pepper and garlic to season
- Tiny bit of Vedgetable or Chicken stock made up per instructions
- Saucepan
You may also include- Butter
- Onions
- Frying pan
- Fryed Bacon
- Fryed bread pieces (crutons)
- Parmesan style cheese flakes
- Garlic
1.) Heat peas through in a saucepan 2.) Blend peas 3.) Stir in stock to desired consistency 4.) Fry onions in butter until soft and add if desired 5.) Add salt and pepper (and garlic) to taste 6.) Top with bacon/crutons/cheese if desired Onion Soup- Onions
- Butter
- Flour
- Salt and pepper to season
- Chicken or Vedgetabe stock made up according to pack
- Saucepan with lid
- Salt and pepper to season
You may also include 1.) Melt butter in the saucepan 2.) Fry onions in the butter until golden and crispy 3.) Stir in the flour to make a thin paste 4.) Add stock (and wine) gradually 5.) Cover and leave to simmer for stirring regularly 6.) Season and serve with toast (preperably wholemeal) Vedgetable Soup- Dried soup/broth mix
- Carrot
- Turnip
- Onion
- Salt and pepper to season
- Stock (any kind) prepared according to instructions on pack
- Large Saucepan
- Salt and pepper to taste
You may also add - Any other spare vedgetable cr*p you haveand want to use up
- Oil
- White Alcohol (white wine, vodka, gin, etc)
- Any other seasoning you want to use
- Dried pasta shapes or rice
1.) Wash oak the broth mix overnight to soften 2.) Chop vedge 3.) Boil up the vedge and pulses (and pasta or rice) in some water until nearly soft 4.) Drain the vedge 5.) Add the stock (and alcoho)) and simmer until pulses and vedge are soft 6.) Season to taste

SPAM FRITTERS!!!
1. Spam 2. Flour 3. Milk 4. One egg
-- Slice Spam into pieces roughly 1/2 centimetre thick.
-- Mix flour, egg, and milk and whisk with a fork until a batter is made.
-- Cover Spam chunks in flour as a light dusting by dunking them into a pile of said flour.
-- Dip Spam chunks into batter, let drip off excess, then dunk into a frying pan lined with olive oil that has been preheated to roughly 'shit that's hot shit!' temperature.
-- Wait until you smell pancake smell... then flip the fritter.
-- Wait for a minute or two again... then remove from pan and eat.
DO NOT BURN YOUR SHIT WITH THE SHIT HOT FRITTER!!!

I don't think me mark or vinnie have really had a recipe with amounts.
The closest we got was last night when i phoned my father for instructions on making our savoury mince and potatoes.
But all he basically said was "cook mince. Add potatoes"

Cook 1 portion of chicken (110g). Cook 1 portion of pasta (70g) Cook broccoli and carrot Add Ragu sauce. Season. Eat.

Seriously.
1.4 Oz butter around 2 heaped tablespoons of flour add milk and heat until combined.
At the same time start cooking pasta, we did something like 250g per person (was a fucking heap)
Then and milk and cheese until it's a good consistency (we used something like 2/5 of a block of red leicester.) We then sliced in a load of salami and combined the sauce with the pasta.
Then season to taste. Serve with grated cheese over the top.
It was fucking amazing, if not cardiac inducing. Cooking with recipes is no where near this fun, unless you screw up, then having a recipe is good, but we haven't made anything that wasn't nice yet.

Delicious Spaghetti Bolognese
Serves 1
125g Beef Mince (Quarter of a 500g Pack) Half a tin of chopped Tomatoes (400g tin) Half an Onion - sliced/cubed 1 Clove of Garlic - crushed/sliced 1 Stock Cube - crumbled 1 Glass of Red Wine (if possible) 2 Mushrooms - sliced A good squeeze of tomatoe puree Salt, Pepper, Herbs, Sugar - To taste Small handful of Spaghetti - about the diameter of a 10p piece
- Fry the onions until soft. - Add mince and cook until no pink bits remain. - Add tomatoes, tomatoe puree, mushrooms, garlic, salt, pepper, sugar & wine. Spinkle the stockcube in stir well. Bring the pan to a simmer, constantly stirring. (10 mins approx.) - Bring a pan of water to the boil and add spaghetti. Use the package guidelines for boiling times. - Add herbs/seasoning at the very end of cooking to the sauce. - Drain the pasta and drizzle a little olive oil over the pasta. Serve on a plate/bowl, topped with the sauce. Add a little grated cheese and eat.

Lunch for Under a Quid
Tuna & Sweetcorn Jacket Potato
1 Large Potato - £0.13 1 Tin of Tuna - £0.41 1 Tin of Sweetcorn - £0.30
Total Cost - £0.84
Put potato in microwave for 5 mins. Then for a further bust of 2 mins as needed until softish.
Cut potato - add butter, tuna, sweetcorn - enjoy!

Oven chips, gravy and cheese.
Get some chips. Oven those biatches for around 10-20 minutes (all ovens vary) Grate lots of cheese. make some gravy - granules, powder, either are acceptable. Put chips on plate. Dowse in gravy, and cover in cheese. Put in Microwave for around 1 minute give or take 10 seconds.
sit down and enjoy the most orgasmic meal you'll ever have.
